Overnight Baked French Toast

1 – one pound loaf Sourdough bread, torn into 1′ pieces
8 large eggs
2 1/2 cups milk
1/2 cup granulated sugar
1/ cup brown sugar
1 Tbsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
1/4 tsp. salt
3 cups fresh berries such as strawberries, blueberries, raspberries
1 Tbsp. confectioners sugar, to serve
Maple syrup, to serve
