One-Pan Sweet Potato and Egg Fajitas
Enjoy our delicious One-Pan Sweet Potato and Egg Fajitas as a hearty breakfast, brunch, or even a quick dinner!

The combination of savory bacon, sweet potatoes, and perfectly cooked eggs nestled among vibrant veggies creates a delightful blend of flavors.
Ingredients
- 1 sweet potato
- 1/2 green pepper, seeded and diced
- 1/2 red pepper, seeded and diced
- 1/2 yellow onion, diced
- 5-8 slices of bacon
- 2 diced chicken apple sausage links
- salt and pepper to taste
- 4-5 large Rosemary Farm eggs
- tortillas, pico de gallo, shredded cheese and cilantro for serving
Instructions
- Preheat oven to 400° F.
- Dice all veggies and set aside.
- Line a baking sheet with foil and evenly spread bacon.
- Top bacon with diced veggies and diced chicken apple sausage, and then season with salt and pepper.
- Place in oven and bake for 10 minutes, remove and stir.
- Place back in oven and bake for another 10 minutes, remove and stir again.
- Place back in oven and bake for 5 minutes.
- Remove from the oven, make holes in between veggies, meat, and bacon mixture and crack the eggs into the holes.
- Bake for another 10-12 minutes until eggs are fully cooked to 165° F.
- Serve with tortillas, pico de gallo, shredded cheese and cilantro!
